Eggs Are Excellent
Do you know what Dr Yadav makes sure to eat daily? Eggs. Eggs are a super food, especially the yolk - rich in a wide variety of vitamins and minerals.
Her favorite version is a quick fry in organic ghee on a bed of spinach and mushrooms. (Pic and recipe below) Poached eggs too are easy & can be made in a microwave.
Why it's a great meal:
Full of protein, fibre anti oxidants, it's an energy rich meal that keeps you powered through the morning. Amenable to zero carb ketogenic diets as well.
Dr Yadav shares her favorite recipe:
Put a non stick skillet on the stove. When warm add a spoonful of organic ghee or extra virgin olive oil. Sautee one chopped onion, one tomato, a few cloves of garlic and a handful of chopped mushrooms. When golden brown add one large fistful of chopped spinach or baby spinach. Sautee. After a minute break two eggs on top. Season with salt, pepper, oregano, rosemary and thyme. Take off the heat and serve when the eggs are done to your liking. I prefer a soft fry with runny centre.
